Description
Black beans are small (about the size of a pea), kidney-shaped, and have a jet black skin. They have cream coloured flesh, a mild, sweet, earthy taste, and a soft texture. They have a particularly rich and full flavour that is sweet and almost mushroom-like. Black turtle beans are a favourite in Mexico, South America and the Caribbean. Black bean soups, stews and sauces are common Latin American dishes, as are refried beans and black bean salsas.
