Potato starch is a white free-flowing starch extracted from potatoes specially cultivated for the starch industry. It has the highest viscosity of any starch product due to its unique granular structure. It has minimal odour and flavour, making it ideal for mildly flavoured recipes. Store potato starch in a sealed container in a cool, dry area. Under these conditions, the shelf life of the product is estimated at 12 months.
